Three Yummy Coffee Desserts

Coffee Desserts
Early wake up with the lovely hosts at Studio10 & what better way to do so then with some coffee desserts to get our morning started!

Chia Latte Pudding
You will need:

250ml cold black coffee of your choice
220ml milk of your choice
3 tbsp honey
10 tbsp chia seeds
1 tsp vanilla bean paste
Chocolate powder or curls to decorate
Whipped cream to serve

Instructions
Whisk together coffee, milk, honey, seeds and vanilla in a bowl.
Pour mixture into desired serving cups or bowls. Leaving room to top with cream and chocolate.
Chill in fridge overnight.
Topped with whipped cream & chocolate.

Coffee Jelly
You will need:

2 packs unflavored jelly powder
Replace the required water on your jelly powder pack with strong black coffee of your choice. Note: only use 1 1/2 of the liquid required on your pack. This will create a more set jelly and easier to cut in cubes to serve.

Crème Topping
You’ll Need
1 1/2 cups evaporated milk
1 cup cream
1 can sweetened condensed milk
Whipped cream to serve

Instructions
Make coffee jelly by following the jelly pack instructions and replacing the water with strong black coffee.
Chill and allow to set overnight.
Cut in small cubes and leave in fridge till ready to serve.

Lightly whip all ingredients together.
Softly mix the coffee jelly and cream mixture together and place in desired serving cups or bowls and allow to chill for 2hours.
Once chilled top with whipped cream.

Helpful tip: if you find your sauce is too thick, pop 3 to 4 ice cubes in your mixture and stir before topping with cream.

Coffee Brownies
You will need:

1 cup plain flour
3/4 cup cocoa powder
1/2 cup dark baking chocolate
200g unsalted butter
1/2 cup chopped walnuts
4 eggs
1 tbsp vanilla bean paste
pinch of salt
1 1/2 cups castor sugar
2 tsp baking powder
2 tsp instant coffee

Instructions
Line your desired baking tin – I use a 20cm brownie tin.
Pre-heat oven to 170.
Using a double boil, melt – butter, sugar, cocoa powder, chocolate, coffee & salt until combined.
Allow mixture to cool slightly.
Add one egg at a time and mix well. Add vanilla at this point also.
Now mix your flour & baking powder in and gently stir till it’s well combined.
Fold through your walnuts.
Pour mixture into your baking tin and bake for 20-30mins depending on your oven. Stick test should come out with a few most crumbs when ready.
Allow to cool, then cut and serve.
